Bailey's Banana Bread

My youngest daughter LOVES banana bread.  And I had 3 bananas that were looking like they either needed to be thrown away tomorrow or made into something.

So I made bread!


My husband gave it a 10 on a 0-10 scale.  My little banana bread expert gave it an 8.  I asked her what I could do to make it better.  She said absolutely nothing.  To me an 8 means 'make it better'...
I had already tweaked the internet found recipe a bit, but I left out the walnuts because Bailey is not a fan.  I would like a 1/2 cup to 1 cup walnuts.  Maybe a smidge more banana...I thought it was moist and pretty darn yummy!


Ingredients:
1 1/2 cups all purpose flour
1/2 cup whole wheat flour
2 tsp baking powder
1/4 tsp salt
1/2 tsp baking soda
1/4 tsp nutmeg
zest of 1 small orange
3 medium bananas, mashed
2 large eggs
1 cup brown sugar
1 stick of butter (8 tbsp), melted
1/2 cup milk

Preheat oven to 350 degrees and grease a 9x5 loaf pan really well.  
Mix the flour, whole wheat flour, baking powder, baking soda, salt, nutmeg and orange peel in a bowl.  In a separate bowl mix the brown sugar, butter and eggs.  I used my stand mixer.  Add in the milk and then the mashed bananas.  Add in the bowl of dry ingredients and mix, but do not over mix.  Pour into the greased pan and bake for 50 - 55 minutes.  Do the knife test to make sure it is done in the middle.  Mine took the full 55 minutes.

Yummy, warm, moist banana bread!

This looks amazing! We actually need to make banana nut bread soon to get some frozen bananas out of our fridge :)
